I love making granola, it’s one of my favourite toppings for my smoothie bowls! The crunch gives a great texture compared to the smoothness of the smoothie! Therefore I thought it was time to experiment with a new flavour!
While granola is great; shop brought granola is often full of added sugar and therefore not as good for you! Making it at home means you can ensure that only natural sugars are used! On top of that you can put any oats, nuts and seeds you want and make it totally you’re own!
I love vanilla as a flavouring, at the moment I am adding it to just about everything, smoothie bowls, granola and chocolate! I think it’s a great addition to everything! I currently use vanilla essences and aim to get the purest one I can find in the shop but am wanting to try vanilla powder in the new year! (I’ll update the recipe for both when I have tried it!). The vanilla comes out so well in this recipe, strong enough to taste but not over powdering and therefore is great when paired with a berry smoothie bowl, like my berry breakfast bowl!
100g of gluten free oats
50g of almonds
50g of sunflower seeds
50g of sultanas
2 tablespoons of coconut oil
2 tablespoons of honey
1 tablespoon of vanilla essence
Preheat the oven at 180C.
Roughly chop the almonds (or blitz in a food processor for 30 seconds). Add to a mixing bowl with the oat, sunflower seeds and sultans and stir until they are all mixed together.
Heat the coconut oil on a low heat until completely melted, then add the honey and vanilla essence and mix well. Take off the heat and pour into the mixing bowl, mix thoroughly to make sure all of the dry ingredients are coated in the liquid.
Pour into a baking tray and put in the oven for 35 minutes, stirring regularly to stop the top from burning! Once done the oats, nuts and seeds should be slightly brown, take out of the oven and leave to cool.
